Serves 2 fairly generously. Best if potatoes cooked well in advance.
240g smoked mackerel
200g new potatoes, quartered and steamed or boiled
Salad leaves
Juice of 1 lemon
1 tbsp olive oil
1 tsp wholegrain mustard
1 tsp maple syrup, optional
Salt
Prepare dressing: mix lemon juice olive oil, mustard, salt, and maple syrup if using. Shake vigorously to emulsify.
Scatter leaves in a dish, add potatoes. Chop up mackerel and mix it in. Pour over dressing and tumble all together.
