Serves 2, oven at 200°C, takes around 50 minutes overall. Goes well with green beans.

2 halves sea bass
1 red pepper, cut into chunks
1 yellow pepper, ditto
1 small red onion, cut into wedges
2 tomatoes, quartered
25g pine nuts
15g parsley, chopped
Olive oil
Salt
Put peppers, tomatoes, onion, and salt in a small roasting tin. Drizzle with oil and roast for 25 minutes.
Put sea bass on top of the vegetables, skin up to avoid the flesh drying out. Bake for a further 15 minutes.
Sprinkle over the pine nuts. Bake for another 5 minutes.
Sprinkle with parsley and serve.
