Not really beans on toast at all, but that’s the name that brings it to mind. It’s a chickpea and tomato stew really.

Generous quantities for 4
2 onions, garlic, finely chopped
2 potatoes, boiled and cubed
2 tsp cumin (optionally the same of turmeric)
2 tins tomatoes
2 tins chickpeas
Fry onions and garlic until golden; add cumin (optionally turmeric), fry a minute longer; add potatoes, ditto; add chickpeas and tomatoes. Cook for 10–20mins.
Serve with rice, possibly also naan bread.
