Chickpea Moussaka

Serves 2

250g frozen peas
250ml Marigold vegetable stock
Optional 10 mint leaves from the garden
½ tbsp basil olive oil

Cook peas in the stock. Add mint leaves if available. Liquidise. Add oil, stir in, serve.
