This is a dairy-free recipe, based on one from the “Kerry Pure” website.

Makes 16
175g Vitalite
125g demerara sugar
2 tbsp golden syrup (heat the spoon)
350g porridge oats
Preheat oven to 180°C. Grease a 25cm square baking tin.
Put Vitalite, syrup and sugar into a large saucepan over a medium heat and stir until the sugar dissolves and spread melts. Remove pan from heat and stir in the porridge oats. Press mixture into tin. Bake for 30 minutes until golden brown. Remove from oven and cool in tin for 5 minutes. Turn out flapjacks from the tin. Cool on a rack before cutting into squares.
2014-05-01 That worked well. Very crisp, and I would be interested to try making more chewy next time. More syrup?
