Oil and Vinegar Chocolate Cake

(serves ??, oven at 180°C)

200g plain flour
220g granulated sugar
30g cocoa powder
1 tsp bicarbonate of soda
½ tsp salt
1 tbsp white vinegar
100ml vegetable oil
2 tsp instant coffee
250ml water

20cm square tin

Mix dry ingredients in a bowl, add remaining ingredients then stir. Pour into tin and bake in a pre-heated oven at 180°C for 30 minutes or until a skewer comes out clean. Transfer the tray to a wire rack to cool.
