>1kg potatoes (To cover the top decently uses a lot of mashed potato)
100g butter
2 onions
2 carrots
2 cloves garlic
1 stick celery
4 tbsp oil
200g mushrooms
500g beef or lamb mince
50g flour
100ml Marsala or apple juice
400g tinned tomatoes
2tsp Worcestershire sauce or Marmite
Boil potatoes, drain, put back in pan over heat for one minute. Mash in butter.
Cut onion, carrot, garlic, and celery into rough chunks; then chop in food processor. Heat oil in casserole (I use the large round blue Le Creuset one) stir in chopped vegetables. Cook for 10 minutes, until soft, then add mushrooms. Cook for 2 minutes. Add meat, stir. Sprinkle flour, stir, add Marsala/apple juice, then tomatoes, then Worcestershire sauce / Marmite. Stir, cover, simmer at a very low heat for 20 minutes, stirring occasionally. Uncover and cook for another 10 minutes.
Top with potato, dab on butter, and grill for a few minutes.
